Chewy bites of cookie dough filled with tart dried apple bits and cranberries turned out to be a total win with my family. I loved this variation on the typically very sweet cookie recipes that abound in my house. Don’t get me wrong, the coconut makes these plenty sweet, but they aren’t loaded with chocolate or overwhelmingly sugary. These sweet treats were inspired by the Nature Box that I received earlier this month. I agreed to review a selection of Nature Box snacks and I was pleasantly surprised by the assortment of foods that arrived at my door. This month’s box was filled with: South Pacific Plantain Chips, Mango Almond Bites, Tuscan Summer Mix, Tart and Tangy Fruit Medley and Cherry Crumble Granola.

Nature Box is a subscription service that sends a healthy box of snacks to your house each month. The snacks are all nutritionist approved and free of high fructose corn syrup, trans fats, partially hydrogenated oils, artificial flavors and colors. Best of all, they actually taste good! My favorites were the Mango Almond Bites (hints of mango and pineapple in a bite-size crisp rice square) and the Cherry Crumble Granola. The granola was soft, lightly sweetened and chewy; I snacked on a bit of the granola on it’s own and then tossed a spoonful over ice cream for a great dessert.

All three of my boys really loved the Mango Almond Bites and the Fruit Medley. My youngest son surprised me by liking the Plaintain Chips so much; they were a uniquely savory twist on classic sweet banana chips. The box arrived just in time for a road trip and the snacks were perfect for in between meals in the car.

If you’re in the habit of buying snacks at Whole Foods and equivalent health food stores, this box is a screaming deal at $19.95 for (5) different 3-4 serving bags. If you’re interested in trying a Nature Box, they have given me a 50% off discount code to share with my readers. The code is “SUMMERSNACKS” and you can apply it to your very first box. You can pause or cancel your subscription at any time, so it is a risk-free deal without any contract to sign or minimum orders to receive.

I recommend making these Cookie Dough Bites the day before you want to eat them. The flavors meld and the texture is perfect after a night in the fridge. These cold bites of cookie dough disappeared way too fast. It’s a good thing I only made a small batch. I couldn’t keep my hands off of them!
