What Is A T-Bone Steak?

“The T-bone and porterhouse are steaks of beef cut from the short loin. Both steaks include a “T”-shaped lumbar vertebra with sections of abdominal internal oblique muscle on each side. Porterhouse steaks are cut from the rear end of the short loin and thus include more tenderloin steak, along with a large strip steak,” according to Wikipedia.

T-bone steaks are also sometimes referred to as Porterhouse steaks, so don’t be confused if you hear both terms used interchangeably.

2 tbsp rosemary (you can use fresh rosemary or rosemary seasoning from a jar)

Juice from 2 lemons

2 Good Ranchers t-bone steaks (cut the above ingredients in half if you’re only grilling one t-bone steak)

Sea salt and pepper to taste

Instructions:

Remove T-bone from refrigerator and let it set out for 30 minutes. You always want to grill your steaks and other meat at room temperature.

Heat your grill to high heat, about 450-550.

Using a small to medium sized saucepan, add butter, half of the olive oil, lemon juice, garlic, and all seasonings and cook on medium-low heat for 5-7 minutes until melted. Continue to mix every 15-30 seconds so it doesn’t burn.

Coat the steak in remaining olive oil, and dip/coat into the mixture (careful as it will be hot).

Once the steak is coated, sprinkle it with sea salt and pepper to your desired liking.

For a medium rare temperature, cook each side approximately 4 minutes, turning only once to get perfect grill marks.

Remove from grill and let the steak rest for the juices to redistribute for about five minutes.

How To Cook A T-Bone Steak In The Oven

You’ll want your delicious Good Ranchers T-bone steak, plus kosher salt and fresh cracked black pepper and 1 tablespoon of canola oil. That’s it. Thanks to the marbled texture of a T-bone steak, you don’t have to do a lot to it, which is what makes it a popular steak to cook at home.

As always, set your steak out for at least 30 minutes before cooking, and preheat your oven to 450 degrees.

Using high heat, heat a large to medium sized skillet, then take a paper towel to pat your T-bone steak dry. Generously season with salt and pepper. Seasoning the steak when it’s dry is a game changer we promise.

Add your oil to the already hot skillet, which will start to smoke. Immediately add your T-bone to the skillet and cook steak on each side about two and a half minutes, until slightly browned. Take your skillet and transfer to the already hot oven (make sure your skillet is oven proof and doesn’t have a plastic handle).

Depending what temperature you like your steak will determine how long you leave it in the oven. Usually 3 to 4 minutes is plenty, but you’ll get to perfect your timing with each meal. Remember that cook time will also be determined by the thickness of the steak as well as what temperature you prefer your steak cooked.
